Sweetening solutions can help to reduce sugar without sacrificing the sweetness that consumers enjoy. Many sweetening solutions offer more sweetness than sugar — and often none or only a fraction of the calories — so you can use less to achieve the same level of sweetness. Replacing sugar can also affect mouthfeel, bulk, texture, browning, etc.

Sweetener Categories
 

a.Corn Sweeteners
Corn refiners produce a variety of sweeteners to meet the demand of both consumers and food manufacturers. All corn sweeteners are natural and share significant advantages–stability and crystallization control. The benefits of corn sweeteners include enhancing flavours, reducing water activity, preserving the texture of canned fruits, reducing freezer burn in frozen fruit, maintaining softness and moisture in chewy cookies, providing body, texture, and flavour consistency in beverages, and imparting a golden hue and flavour to baked goods.

b.Polyol Sweeteners
Polyols are sweeteners also called sugar alcohols, but they are neither sugars nor alcohols. Polyols are carbohydrates with low digestibility. They can be distinguished on labels by the suffix -itol such as sorbitol, xylitol, erythritol, lactitol, mannitol, maltitol, isomaltitol. Sugar-free or reduced-sugar recipes often use them to add bulk (weight and volume). 

c.Speciality Sweeteners
Consumers want to reduce calorie consumption but refuse to compromise on taste. Speciality sweeteners designed for use in high-quality sweeteners make it possible to reduce sugar while maintaining a high-quality sweetener profile.

d.Sugar
There are different kinds of sugar, such as granulated sugar, refined sugar, liquid sucrose, and brown sugar. They are widely used in bakery and baking mixes, candies, canned products, cookies, sauces/marinades, soft drinks, pharmaceuticals, jams, jellies, meats, chewing gum, dairy products, processed foods, etc.

e.Zero Calorie Sweeteners
Erythritol is a zero-calorie sweetener. It is known as a sugar alcohol and is naturally occurring. Natural erythritol can be found in some fermented food products, but commercially it is made using chemicals to extract it from corn. Stevia is another zero-calorie sweetener. It is a natural sweetener and sugar substitute derived from the leaves of the plant species Stevia rebaudiana. Stevia blended with a sugar alcohol called erythritol works well in low-carb baked desserts. 

f.Sugar Reduction Solutions
